| Make it Light - Alfredo Sauce Ingredients: 2 cups skim milk 1 cup Part Skim ricotta cheese 2/3 cup Greek-style yogurt ¼ cup minced onion 2 Tbsp chopped garlic 1 tsp salt ½ tsp nutmeg 4 Tbsp Butter ¼ cup flour 1/3 cup grated Parmesan Cheese 1 Tbsp lemon zest 1 Tbsp Chopped fresh parsley Salt and pepper to taste To Prepare: In a blender add milk, ricotta cheese, Greek-style yogurt, onion, garlic, salt and nutmeg and set aside. In a large skillet melt butter over medium heat and whisk in the flour until smooth. Then whisk in the blended milk and cheese mixture into the skillet. Simmer the sauce until it thickens (about 8 minutes). Add the Parmesan cheese, lemon zest, salt and pepper to taste. Makes 4 cups of sauce Makes 16 - ¼ cup servings = 90 calories per serving (6g fat, 0g fiber, 4g protein, 5g carb) |
