COOKING FROM SCRATCH - COOKING FOR BEGINNERS TO SKILLED HOME COOKS
This six week series of classes give the participants to learn all the skills and techniques to be an
excellent home cook using the secrets of our Professional Chef. Each class is developed to give hands
on experience trying new cooking techniques and increasing your skills so you can wow your family and
friends.
Introduction to Basic Cooking  Mar 14th 2012         $45pp
This class will cover kitchen safety, sanitation, kitchen equipment,
stocking and managing supplies. Reading recipes, wter and dry measurements and
basic knife skills for
chopping and cutting
Sauces, Soups and Stocks       Mar 21st 2012           $45pp
Making a perfect stock is the beginning for delicious sauces and soups. The chef will teach basic stock
making and then show you how to make broth soups, creamy soups and how to make the mother sauce
used as a base to make multiple sauses and gravies your family will love
Sauté  and Pan Fry                   Mar 28th 2012           $45pp
Using vegetable and meats this class will give you the opportunity to learn professional sauté and pan
frying skills for making the prefect dish without using too much oil or fat
Roasting and Stewing               April 4th 2011          $45pp
The art of roasting meats will be explored and the opportunity to make
a restaurant quality roasted chicken. Learn the trick of stew meats to
bring out the flavor without over cooking
Desserts                                     April 11th 2011         $45pp
Basic baking skills will be discussed. Make the prefect pie crust and filing. Learn to make cakes,
chocolate volcano cakes and other specialty desserts that will your family will enjoy.
Eggs and Brunch Dishes           April 18th 2011          $45pp
Making the prefect fried egg, omelet or scrambled egg will be
demonstrated. Learn to make quiches, strata’s and other delicious brunch side dishes

soup to satisfy hunger anytime.  Packing you fridge with time saving tips, the chef will cover making dips for veggies and fruit that
adding more flavor to make your weight loss efforts count. Chef will share his tips for shopping to save time and your food budget
 
      
Feb 15th     Sauté, Simmer and Stir-Fry These classic cooking techniques help to make quick and easy 30 minute
meals. Our chef demonstrates these basic techniques you will know how to make tasty meals in minutes. Chef includes helping you
stock your kitchen with the basics for meals in minutes.

Feb 22nd     Sauces and Soup Learn skills of a profession Chef to limit the calories and bump up the flavors. Salads
make the meal and making a meal out of salad. Making soups to add to a meal or to make the meal. Sauces usually add unwanted
calories, learn how to loose the calories and add the flavor of sauces and glazes.

Feb 29th     Baking and Making Desserts Baking and making sweets that really satisfy your treat-tooth. Making
desserts that make the most of your points. Chef will share tips for making fancy desserts lower in points and let you know when
you need focus on flavor and not calories. Learn to make Chocolate roll cake with creamy filling, cookies, bars, creamy desserts
and fancy fruit.
